Pizza Sauce

I lay down the basics for a good Pizza Sauce. It is simple, you all know I am a chef. Take what knowledge you want from me here, it is all good. I know what I am talking about. And if you like to cook from scratch too, maybe you will appreciate the art of gastronomy.

Ingredients:

Chopped tomatoes. Buy a large tin.
Tomato puree, 1/2 tube.
White Onion, 1, large.
Sugar - It is essential that you add sugar to an Italian Tomato sauce. Tomatoes are bitter in their raw form, the sweetness of the sugar counter effects the bitterness of the tomatoes. I recommend 2/3 tablespoons to one large tin of chopped tomatoes.
Fresh Basil, chopped.
Oregano, dried.

Method:

Fry the White diced onion in a frying pan, slowly till nearly cooked. You could add a little garlic at this stage, only a little (if you like). Fry for few minutes.

Heat the chopped tomatoes in a separate pan, do not boil, this will impair flavour.

Add everything to the pan of chopped tomatoes, except the tomato puree at this stage.

Heat gently, till the point of simmer. Cook for five minutes.

Add the tomato puree last, and if you want a smooth sauce pass it all through a blender/food processer.

The Tomato puree acts as a thickening agent, because it is concentrated.

All ingredients are added to your liking, choosing how much you like of of each is up to you. The essentials here with Italian cooking is chopped tomatoes, tomato puree, sugar, onion, herbs.

the number one rule here is you need to add sugar to a tomato sauce. No sugar = shitzza, not pizza.

What about a bolognese sauce?
Bolognese sauce has the same basic ingredients as Pizza sauce. You can make a good Bolognese sauce from a basic Pizza sauce recipe. It is the same style of cooking.

If I was making Bolognese I would be adding celery, carrot, mushrooms, and minced beef especially (to my Pizza sauce). Italian cooking is easy. It is all herbs and tomatoes, pasta and dough!

it seems you are happy to dish it out but you dont like it when people come back at you. i dunno im tierd and grumpy.

to sum it up if i deleted that post in theory i would have to delete every single post i came across that was "unnecessary".

If I was making pizza I would buy a pizza base, and make everything else myself. I have made pizza dough, but it a really long process I have.
