I lay down the basics for a good Pizza Sauce. It is simple, you all know I am a chef. Take what knowledge you want from me here, it is all good. I know what I am talking about. And if you like to cook from scratch too, maybe you will appreciate the art of gastronomy.
Ingredients:
Chopped tomatoes. Buy a large tin.
Tomato puree, 1/2 tube.
White Onion, 1, large.
Sugar - It is essential that you add sugar to an Italian Tomato sauce. Tomatoes are bitter in their raw form, the sweetness of the sugar counter effects the bitterness of the tomatoes. I recommend 2/3 tablespoons to one large tin of chopped tomatoes.
Fresh Basil, chopped.
Oregano, dried.
Method:
Fry the White diced onion in a frying pan, slowly till nearly cooked. You could add a little garlic at this stage, only a little (if you like). Fry for few minutes.
Heat the chopped tomatoes in a separate pan, do not boil, this will impair flavour.
Add everything to the pan of chopped tomatoes, except the tomato puree at this stage.
Heat gently, till the point of simmer. Cook for five minutes.
Add the tomato puree last, and if you want a smooth sauce pass it all through a blender/food processer.
The Tomato puree acts as a thickening agent, because it is concentrated.
