Alot of people will disagree with me on this one, but I do not find racist jokes offensive at all.
For two reasons.
Firstly, the only people REALLY offended by racist jokes are only offended because the jokes target is in relation to them. These people are hypocrites. Every body is racist. Every single person stereotypes those that are different to them. Racism isn't just about colour, nationality or religion, nor is "race" just about them either. The word "race" defines any group of people that share elements that make them different from others, be it colour, religion, physical appearance, age, gender or lifestyle choices. Being Fat puts you into a race of Fat people. Being a fan of Eminem puts you into a race of Eminem fans. Being a Doctor puts in a race of Doctors. The possibilities are endless. So when you stereotype someone because of that element, you are being racist.
Secondly, being offended by something is pointless. People are offended because they believe they are being insulted. Why be insulted? The person insulting you has no physical or emotional relationship or bonds with you, so why the fuck do you care what they think? The person probably didn't even direct the insult at you directly, and may have not meant any offence by it. And even if they did, why the fuck do you care what they think when the person means absolutely fuck all to you?
Its time the human race got over this shit, we are intelligent enough now to do so. Racism won't end by being nice to each other, it will only end when no one is bothered by it.
I'm not saying you have to find it funny, but get over yourself. We all do it.
